Quick Burritos

Some days are so busy that when I get home I just don’t have the energy to put into a big meal. I want something quick! This Quick Burrito is perfect for those nights (it also makes a great breakfast burrito). Make it according to the recipe or customize it to fit your family!

INGREDIENTS

3 medium potatoes diced
1/2 onion diced
1 tbsp diced garlic
1-2 tsp Taco Seasoning

Toppings
Chipotle Aioli (mayo mixed with Chipotle aioli seasoning)
Pico de Gallo (or for quick pico de gallo - Poco Picante Seasoning mixed with diced tomatoes
Avocado or Guacamole

STEPS

  1. Microwave diced potatoes on high for about 4 minutes.

  2. Sauté onion until soft. Then add garlic and sauté for another minute.

  3. Add Taco Seasoning and SPG or Butcher’s Block Sea Salt Blend and cook for another minute.

  4. Add the potatoes, mix well and cook for another minute or two.

  5. Taste and add more salt blend if needed.

  6. Assemble your burrito by adding the Chipotle Aioli to your flour tortilla. Next add the potato mixture. Top with Pico de Gallo and Avocado if using. Roll your burrito and enjoy

A Word About Protein

You can easily add protein to this burrito as desired. I enjoy adding black beans when I want it to be quick. If I have a bit more time, I may sauté soy chorizo to add to it. You can customize to fit your family. Add some egg if you eat eggs and it makes a delicious breakfast burrito.

NOTE: If making for breakfast or just to save time, you can prep your potatoes in advance. Dice your potatoes and submerge in cold water and keep in your fridge up to 24 hours. Add a little lemon juice to the water to help them keep a little longer without oxidizing.
