My Favorite Mac n “Cheese”

 I love Mac N Cheese. And since I started a plant based diet, I’ve really missed it. But now I can have my mac n cheese with the help of this delicious cheese sauce.

INGREDIENTS

3 cups uncooked pasta of choice (I usually use a gluten free option)

1 pk Epicure’s Modern Mac

2 cups unsweetened plant based milk

Veg of choice (this is optional - I usually see what’s in the fridge and sauté and add on top at the end. You could also add in frozen veg at the end as it sits)

STEPS

  1. Cook macaroni in a pot according to package directions, then drain.  

  2. Meanwhile, place seasoning in large, microwave-safe measuring cup or bowl. Gradually whisk in milk, 1⁄4 cup at a time, whisking well between additions. Microwave, uncovered, on high 4–5 min, or until creamy.  

  3. Stir butter into cooked pasta. Stir in sauce; it will thicken as it sits. 

  4. While the macaroni is cooking and cheese sauce are cooking sauté your veg to add on top (spinach, onion, peppers are fabulous here). OR grab your frozen veg mix such as peas, carrots and corn from the freezer then gently mix in when you add the sauce to the macaroni and cover. The veg will thaw and warm as it rests.
